Instructions
- Place the diced sweet potatoes in a bowl. Toss them with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
- Preheat your air fryer to 400°F (200°C).
- Place the seasoned sweet potatoes in the air fryer basket in a single layer, working in batches if necessary to avoid overcrowding.
- Air fry for 15 to 20 minutes, shaking the basket every 5 minutes, until the potatoes are tender inside and crispy on the outside.
- While the potatoes cook, prepare the lime crema. Mix the sour cream (or yogurt), lime juice, and lime zest in a small bowl. Stir well.
- Warm the tortillas according to package directions (you can warm them briefly in the air fryer or a dry skillet).
- Assemble the tacos: Place a portion of crispy sweet potatoes onto each warm tortilla. Top with shredded cabbage, a drizzle of lime crema, and a sprinkle of cilantro, if using.

- For extra crispiness, ensure the sweet potato pieces are dry before tossing them with oil and spices.
- Do not overcrowd the air fryer basket; this allows the hot air to circulate and crisp the potatoes properly.
- If you prefer a softer taco, use flour tortillas; for a more traditional flavor, use corn tortillas.
