Ingredients

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon butter
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Add asparagus to the same skillet and cook for 3-4 minutes, until tender-crisp.
  4. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  6. Bring the mixture to a simmer and cook for 1-2 minutes, allowing the sauce to thicken slightly.
  7. Stir in butter until melted.
  8. Return the cooked shrimp to the skillet and toss to coat with the sauce.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh parsley and serve immediately.

Notes

  • For an extra kick, add a pinch of red pepper flakes with the garlic.
  • If you don’t have chicken broth, vegetable broth or even water can be used.
  • Feel free to adjust the amount of garlic to your preference.
