- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 4 cloves garlic, minced
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon butter
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add asparagus to the same skillet and cook for 3-4 minutes, until tender-crisp.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
- Bring the mixture to a simmer and cook for 1-2 minutes, allowing the sauce to thicken slightly.
- Stir in butter until melted.
- Return the cooked shrimp to the skillet and toss to coat with the sauce.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and serve immediately.
